AWD Astro or Safari with good tires. Enough space for the occasional overnight for two people / one + dog. Cheap, easy to find, reliable, easy to work on, V6 is enough for the mountains. Don't drive it like a maniac and it'll do just fine.
Take out the middle seat. Buy two pop up 4'x2' sturdy plastic tables. Cut legs down to size and youv'e got a collapsible, full-sized mattress platform for sleeping. Ski storage underneath.

I've got a full size truck with a nice "carpet kit" which fit my wife 50# dog and I very nice.
4x4 and good tires are a must. And a tow strap. They always seem to come in handy and if the victim (guy in ditch) doesn't give you cash beer or grass is the next common currency

When I flip the plywood over and put it on the rails of the two benches it creates a nice comfy bed that's got 2 inches of foam and is covered with pretty comfy carpet. Throw a sleeping bag down and its darn right cozy.

Going on Subaru #2, a speedy '11 Subaru Impreza Outback. Careful with the pre 2010 Outbacks. They have engine problems (head gasket), I went through that problem. When I got #2 I tried to search for any problem or positive for the car. Be smart in researching for a car, leave emotions at the door. Buy what is best for you.
In Jackson, it is true we all have Subarus, Toyotas or big trucks if you have a big sled.

Want to upgrade to a Mercedes Sprinter soooo bad.
Sprinters are not the best in snow and the high ceilings are even sketchier. My buddy seems to get around fine in his but throw some winds and corners into your up and down hill and you will be creeping rather than cruising.
The new 4x4 diesel should help with the issues in traction but I see this more for mud and sand than snow.
Thoughts? Am I full of shit?

No i agree, they arent as safe as a subaru, but for a large van I've read they are rather good in the snow. I could definitely see the height vs the wind being an issue tho.
On top of that they're extremely expensive. However the only alternative is an e series adventure mobile, which are twice as expensive.
Also, due to the height they are sketchy in parking garages... have had a few rep friends find that issue out the hard way.
Oo dear. Ive done that before. 6 years ago I had a 2002 chevy avalanche lifted and on huge tires. AKA the over compensating mobile. Brought it down to san francisco for a week to visit my sis, scraped the top on her garage. Then i blew out the transmission, just by trying to parallel park I blew out the power steering pump and the power steering belt ripped off and damaged the trans coolant line. Fat guy little coat?
