"Parastacus pugnax, also known as land shrimp or burrowing shrimp, is a crustacean of the Parastacidae family. This crayfish is one of the 6 species of the Parascatus genus that inhabits the rivers of Chile; it is an edible species characteristic of Chilean cuisine."
Not much to them, normally, and kind of musty tasting. Also known as mud shrimp.

Not to be confused with Camarón de Rio, common in the few rivers in the north of Chile with sandy shallows. These are tasty and bigger shrimp.
