Check out BeyondFleece for the polartec 200 "emgen" sweater. It's a nice light weight breathable mid layer. They will custom make it to fit exactly the way you want. I think they cost about $60.
I like Patagucci R1.5 and R2 fleece - really light, compressible, and warm. Pick according to your insulation needs. And I like pullovers because they're less bulky.

do you want a pullover or a jacket? norface makes nice ones in 100 and 200 weight on the full zip jacketed front.
foot locker's (or similar) private label polar fleece.... usually buy one get one free at $30 ($15 each) or somewhere in that ballpark. You're already blocking the wind, you just need some insulation... silly to spend $60 to $100 + just for that.
I'm wondering if someone that paid $400+ for an Arc'teryx Sidewinder will be able to tell the difference between crappy fleece fabric and construction and the good stuff. After all, you only need to wear a garbage bag to block the wind - silly to spend $400+ on a shell.
My shell (Moonstone Uber Sauvage) retails(ed) for $450, my pants (Norrona Lofoten) for about the same. I have a $200+ patagonia R4 fleece. ....I could go on... I spend wayyy too much on this schit even after pro-form.
My $15 (that I got for about $2) fleece gets as much use as any of my other equipment for resort skiing. You don't have to spend $100 to get a good quality fleece top that doesn't need to do anything other than keep you warm and comfortable.
I like my mountain hardwear monkey man jacket, it's warm as hell under a shell and extremely breathable.

im glad i got the jacket i did. It was pretty brutal today at copper, 40 + winds , white out conditions , and i really like i could tuck half my face away inside the collar. i was toasty all day . just seeing what you guys are using.

I second the patacucci R. The 4 is a stand alone jacket in a lot of conditions, and the 2 is super nice. The shit lasts forever.

Icebreaker 320 Merino Wool
I love merino wool for backpacking, skiing, snowshoeing, anything
It breathes, warm but never too warm, and never ever stinks
(wool is natural that way), not bulky, and Merino does not itch!
Warm when wet, no "flash off" coldness when you stop exersion.
I have every weight of merino wool from 150grams/square meter to 320grams/m2. Can't live outdoors without it!
I don't know why they ever bothered to make any other fabric!
Go with The Victoria Secrets g-string. The silk is high quality and won't chafe the boyz.

You could try out the Arc'Teryx Apache zip layer... not too much but not too little, not too bulky either... Good option IMO.
