What could go wrong?
I say go for it. Look at Sevylor while you’re at it.
I’d get a SUP with kayak seat attachment.

Not really. With a proper paddle and adapter you can stand up paddle or sit down paddle, especially good option if the wind gets up.

I'm guessing you want an inflatable kayak for storage & transport reasons?
Otherwise I'd consider a basic plastic kayak at that price point for cruising around lakes.
I would think your gambling with durability with budget inflatables.
We have two of the two person versions of that Intex. We use them on the Green at Boblandia, they’re durable enough to run rivers with. I think you’d be fine paddling around lakes.
