Refrigerated or no?
Even left out its good a while. I've taken it on 10 day long backpacking trips and had it be fine the whole time.
Had an unsliced one rolling around the back of our car in Australia for some time--like months, with no apparent ill effects.
Dick Sticks last damn near forever if you leave them unsliced. The perfect camping food.
Refrigerated and sliced.
As noted, in their whole form, they last indefinitely. That's pretty much the point of salami.
Once sliced, you've greatly increased the surface area available for oxidation and bacterial growth. Shelf life at this point depends on how it's stored. Let's assume best and worst case scenarios. Best case is plastic baggy, tightly sealed, in your fridge which maintains a steady 42%. I'd say you have up to 2 months, possibly more depending on the quality of the salami.
Worst case, torn up plastic wrap, reused after you took it off the gouda, lost the salami wrapper, and recycled it to protect the salami. Shoved this in a coat pocket, skied all afternoon, plus the next day, left the coat in your ski gear bag, where evrything was wet, and then dropped bag on top of heat register at home. That shit's toxic in 4 days, IMO.

I was keeping some in a large screw top air tight jar in the fridge but some moisture got in the jar and the LJ grew white fuzz so now I leave it in the jar out of the fridge which works, in the fridge meat keep but not sealed also works just seems to make it dryer and no fuzz ...so moisture is the enemy
Last june I took 5lbs of LJ on a 3 wk kayak trip, sliced it into all kinds of meals, it made a big difference compared to the trip last year where we were always craving protein and we all lost weight
On a related note, I just cooked and ate some chicken that was 7 days past the sell by date and smelled a bit funky. I'll report back if trouble arises.
