seems so simple to have an immersion water heater with a thermostat. so I could plug it in, put it in a big tub of water, and maintain the temp at 100 degrees or 102 or whatever I set it at. am I missing something? cant seem to find something that could do this easily for under $100.
I want to make mozzarella cheese and I am cheap. This is the missing piece of the puzzle.

i bought 20 50watt fishtank heaters for my bathtub. works great if you don't mind all the wires coming out like some kind of sea monster.
Use a pot large enough to fit whatever you're trying to cook, turn the hot h2O faucet on high and stick a thermometer to the side of the large pot. Dial in the H/C faucets until you maintain desired temperature. Toss whatever you're cooking in vacuum sealed bags and let them do their thing in the h20. Google: ghetto sous vide Momofuku
