I moved a set of bindings to an older pair of rock skis and found one of the rear mounting holes is stripped. The screw seats properly but does not completely tighten. Does this mean a complete remount or will retapping the hole facilitate a properly tightened screw?

Depends on how it's done and the ski.
As long as there is enough material for the heli-coil to "bite" into, and it has a decent core, not entirely of foam, they hold pretty damn well. If the guy who sets them does a half-ass job of tapping the new hole and only sets half of the actual coil into the hole and clips the rest, they will likely come out. If the ski has a titianl layer, theres a good chance they will hold, heli-coils are pretty bomber when put in correctly.
i'll back everybody else up, heli coils are bomber when done right and put in a ski that has wood and or titanal.
foam + heli coils = not so tough.
it's only one screw so you are prob. pretty safe.
