Open Range was excellent.
Eastwood Unforgiven, good stuff there.
"We all have it coming"
"You sure killed the hell out of that fella today"

"Well he should of armed himself if he's going to decorate his saloon with my friend."

there's many a more but that's what floats into my mind.
The way of the gun is good too.
Open Range was the first movie I thought of as soon as I looked at the thread title.
tombstone....has to be one of my favourite westerns ever....val kilmer....brilliant

It's not exactly a shootout, but this scene from a relatively recent Australian "western" called The Proposition is pretty high on the violence scale:
