Open Range was excellent.
Eastwood Unforgiven, good stuff there.
"We all have it coming"
"You sure killed the hell out of that fella today"

there's many a more but that's what floats into my mind.
The way of the gun is good too.
Open Range was the first movie I thought of as soon as I looked at the thread title.

It's not exactly a shootout, but this scene from a relatively recent Australian "western" called The Proposition is pretty high on the violence scale:
